Chilli Oil – 2 Tbsps

Vinegar – 1 Tbsp

Mock Meat Topping:

Tofu – 200g

Ginger – 1/4th Inch

Garlic – 2 Cloves

Green Onion – 1 Bulb

Walnuts – 1/4th Cup

Soy Sauce – 1 Tbsp

Vinegar – 1/2 Tbsp

Salt to taste

Bok Choy – A handful for topping

Noodles – 150g

Peanuts – Garnish

Green Onion – Garnish


Prepare the Mock Meat Filling:

Heat oil in a pan and sauté finely chopped garlic, ginger, and green onion for a minute.

Add crumbled tofu and pan-fry until golden.

Season with salt, soy sauce, and white vinegar. Toss well.

Add chopped walnuts, toast for a minute, and set aside.

Prepare the Noodles:

Boil 150g of noodles according to package instructions. Reserve some liquid.

Blanch Bok choy in the same liquid after removing the noodles.

Create the Sauce:

Mix tahini, soy sauce, vinegar, brown sugar, chili oil, Sichuan peppercorn powder, white pepper powder, and garlic.

Add a spoonful of reserved noodles to boiling water and mix well.

Assemble the Dish:

In a bowl, add some sauce, followed by boiled noodles.

Top with blanched Bok choy, mock meat filling, crushed peanuts, and green onions.

Toss well to combine.
